  • 1 15 oz. can low sodium black beans, drained and rinsed well
  • 2 tbsp. cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp. salt
  • 1/2 cup maple syrup
  • 1/4 cup coconut or vegetable oil
  • 2 tsp. pure vanilla extract
  • 1 tsp. baking powder
  • 1/2 cup chocolate chips and extra for garnish (1/4 cup)
  • 1/2 cup walnuts, chopped


  1. Preheat the oven to 350°F.
  2. Combine all ingredients except chocolate chips and walnuts into a food processor (or blender) and blend until completely smooth.
  3. Stir in walnuts and 1/2 cup chocolate chips, then pour batter into a greased 8×8 pan.
  4. Sprinkle over remaining 1/4 cup chocolate chips.
  5. Cook for 15-20 minutes and let cool for at least 20 minutes before cutting. If brownies still look a bit undercooked, put them in the fridge overnight to firm them up.
