Easy Taco Soup

This is a make in minutes “Easy Taco Soup”. Delicious for the whole family and an all American favorite dish.

Ingredients

16 oz. Ground Beef, 95% Lean, hamburger, 5% fat

½ to 1 packet Ranch Dressing Mix (optional)

1 oz. Taco Seasoning Packet, McCormick / Choose Mrs. DASH seasoning to lower the sodium content further

10 oz. Diced Tomatoes & Green Chilies, Rotel

15 oz. Yellow Corn, Canned, Low Sodium

2 cups Pinto Beans, Canned, Low Sodium

2 cups Black Beans, Canned, Low Sodium, mature seeds, canned

2 cups Kidney Beans, Canned, Low Sodium

24.5 oz. Diced Tomatoes, canned

Directions

  1. Brown the hamburger and drain the fat.
  2. Drain and rinse the beans and corn. Do not drain the tomatoes.
  3. Combine all ingredients in a pot larger than 3 quarts.
  4. Warm thoroughly. Simmer, stirring often, for at least 1 hour.
  5. Serve with shredded 2% cheese and nonfat plain Greek yogurt or a few slices of Avocado (these items are not included in the nutrient analysis).

Slow Cooker Alternative:

  1. Brown the hamburger and drain the fat.
  2. Drain and rinse the beans and corn. Do not drain the tomatoes.
  3. Combine all ingredients in the slow cooker.
  4. Cook on low for at least 4 hours.
  5. Serve with grated 2% cheese and nonfat plain Greek yogurt or a few slices of Avocado (these items are not included in the nutrient analysis).

*Choosing low sodium or no added salt canned items will decrease the sodium content reflected on this label.

* Choose Mrs. DASH seasoning to lower the sodium content of this recipe further.
