Ingredients:

  • 1 ½ lbs boneless skinless chicken cut into 1 inch cubes 
  • 1 lb potatoes, cut into 1 inch cubes 
  • 1 medium red or yellow onion, chopped
  • ½ cup light Greek vinaigrette
  • ⅓ cup Kalamata olives, quartered
  • ¼ cup lemon juice (2 lemons)
  • 1 tsp dried oregano
  • 1/2 tsp garlic salt
  • 1 medium tomato, diced

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit, or heat up a grill.
  2. Prepare the vegetables:
  3. Peel the skin off the onion and chop it into small pieces.
  4. Scrub the potatoes under running water to remove any dirt. Cut them into 1-inch cubes.
  5. Dice the medium tomato into small pieces.
  6. In a large bowl, mix together the diced chicken, chopped onion, cubed potatoes, Greek vinaigrette, olives, lemon juice, dried oregano, and garlic salt.
  7. Cut 4 sheets of aluminum foil, each measuring approximately 12×12 inches.
  8. Divide the mixture equally among the foil squares.
  9. Fold the top and sides of each foil square to create a pocket, leaving a small opening at the top for air to circulate.
  10. Bake the foil packets in the preheated oven for 30 minutes. If using a grill, cook over medium heat for about 25-30 minutes. Make sure the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  11. Once cooked, carefully open each foil packet and add the diced tomatoes.
