Southwestern Turkey Taco Skillet

Prep Time: 10 minutes            Cook Time: 25 minutes          Yield: 6 servings       Serving Size: 1.5 cups

Ingredients:

  • 1 tbsp olive oil
  • 16 oz 93% lean ground turkey
  • 1 medium red or white onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp cumin, ground
  • 1 tbsp paprika, ground
  • 1 tsp oregano, dried
  • ¼ cup tomato paste
  • 4 fresh tomatoes, peeled and roughly chopped (600g)
  • ¼ cup chicken stock, low sodium
  • ½ tsp salt
  • 1 medium zucchini, chopped in ½ inch pieces 
  • 1 can low sodium black beans
  • 1 can low sodium canned corn or frozen corn
  • 2 Jalapeno, deseeded and chopped
  • 2 tbsp coriander chopped and extra 2 Tbsp for garnish
  • 2 red bell peppers, diced
  • Lime wedges, for garnish

Directions:

  1. Pour the olive oil into a large skillet on high heat and brown the turkey by breaking the meat into small pieces (I use a fork for this), roughly 5 minutes.
  2. Add the onion, garlic and simmer for 3 minutes, stirring a few times.
  3. Add the cumin, paprika and oregano, stir for a few minutes.
  4. Add in the tomato paste, tomatoes, stock and salt and simmer for 10 minutes.
  5. Mix in the zucchini, black beans, corn, jalapeno, 2 tbsp cilantro, and pepper, cook on low for a further 5 minutes until the zucchini is tender and crisp.
  6. Garnish with cilantro and lime wedges
