Pumpkin Spice Date Bites

Prep Time: 15 minutes Cook Time: 0 minutes Yield: ~32-40 Serving Size: 1 bite
Ingredients:
- 2 cups pitted dates
- 1 ¾ cups dry roasted or toasted almonds
- ¼ tsp salt
- 1 tbsp vanilla extract
- 1 tbsp maple extract
- 2 tbsp nut butter
- 2 tbsp pumpkin spice
- 1 tbsp orange juice and zest of 1 small orange
- ¼ cup roasted almonds, chopped finely to roll the balls in
Directions:
- Add all of the ingredients into the food processor and blend for a few minutes until the mixture can be moulded into small balls. You can continue to blend if you prefer the almonds to be smaller in size.
- Remove mixture from the food processor and roll into 32 balls
- Roll the balls in finely chopped almonds, cover and leave to stand for 15-30 minutes before eating.
Tips and Tricks:
- You can just add cinnamon if you do not want to add pumpkin spice
- Raw almonds can be used instead of roasted almonds
- If you find the spices is too strong, reduce by 1 Tbsp for a more subtle spicy taste.
